Carrot cake style muffins

Ingrédients
1 240 g (or 2 cups) bag Fun Oats! Carrot Cake mix
¾ cup vegetable drink
¼ cup unsweetened applesauce
¼ cup brown sugar
¼ cup maple syrup
¼ cup unsweetened coconut
¼ cup chopped walnuts
1 tbsp. vegetable oil
1 tsp baking powder
½ tsp ground cinnamon
pinch of salt
Steps
Preheat the oven to 350 F (180 C) and line a muffin tin with 8 paper liners. Pour all ingredients into a large bowl in the order listed. Mix until smooth. Pour 1/3 cup of the mixture into each paper case and bake for 20 minutes. Remove from oven and let stand 15 to 20 minutes before unmolding and and enjoy. Delicious for breakfast or as a snack. Freezes well.
