Banana and Oatmeal Iced Cake

Cake
½ cup vegetable drink
½ tsp. apple cider vinegar
6 tbsp. vegetable margarine, softened
2/3 cup granulated sugar
3 small ripe bananas, mashed
1 tsp. vanilla extract
1 tsp. baking soda
½ tsp. ground cinnamon
pinch of salt
1 cup Fun Oats! Bananas & Coconut mix
2 cups all-purpose flour
Icing
1 tbsp. vegetable margarine, softened
1 cup powdered sugar, sifted
1 tbsp. vegetable drink
1 tsp. vanilla extract
Steps
- Preheat oven to 350 F (180 C) and line an 8 x8 in 920 x 20 cm) mold with parchment paper. Set aside.
- Mix cider vinegar with vegetable drink. Set aside.
- In a large bowl, soften the vegetable margarine in the microwave, then mix in the granulated sugar, mashed bananas, vanilla extract and vegetable drink.
- In a small bowl, mix all the remaining ingredients together, the gradually add them, mixing well. Pour the batter into the prepared tin and bake for 47-48 minutes, or until a toothpick comes out clean. Meanwhile, make the icing.
Icing
- Soften the vegetable margarine for 15 seconds in the microwave, then add the sifted powdered sugar, vegetable drink and vanilla extract. Mix until smooth. Frost the completely cooled cake, then garnish with banana slices and chopped walnuts.
